Diver Scallop Ceviche

  1. Combine lime zest, juice, pineapple, olive oil, spices, and honey.
  2. Set mixture aside.
  3. Clean and wash the scallops, then cut each 1 in 1/2 lengthwise.
  4. Add scallops to lime juice mixture, stir well and set aside in cooler.
  5. Add the vegetables and cilantro to the scallop mixture.
  6. Stir well.
  7. Season with salt and pepper, to taste.
  8. Cover and chill at least 3 hours.
  9. Serve with tortilla chips.
