Stir-Fried Pork on Lettuce

  1. Cut tenderloin into 1/4 inch thick slices.
  2. Combine sherry, water and soy sauce in medium bowl, add tenderloin, stirring to coat.
  3. Heat 2 tablespoon oil in wok or large frying pan.
  4. Add mushrooms and pea pods and cook quickly 3 to 4 minutes, stirring constantly.
  5. Remove vegetable and reserve.
  6. Drain marinade from pork, reserve.
  7. Add remaining oil to pan.
  8. Quickly brown pork 3 to 4 minutes or until done, stirring constantly.
  9. Stir cornstarch into reserved marinade.
  10. Add vegetable and marinade and cook, stirring occasionally, until thickened.
  11. Serve pork stir-fry over lettuce.
