Corn Spoonbread Mix In A Pint Jar

  1. Place first 5 ingredients into a medium bowl.
  2. Blend with a whisk.
  3. Place mixture into a zipper sandwich bag.
  4. Place bag into a wide mouth pint size canning jar.
  5. (Use a new jar - not one that has ever been canned in or cooked in before.)
  6. Place can of corn into jar on top of mix.
  7. Screw lid onto jar.
  8. Decorate jar and attach a recipe card with the following instructions.
  9. Remove contents of jar.
  10. Empty mix into a medium bowl.
  11. Add 1 egg, 1 tablespoon oil and corn (undrained).
  12. Mix well.
  13. Spray inside of jar with cooking spray.
  14. Place batter into jar.
  15. DO NOT PLACE LID ON JAR.
  16. Bake at 350F for 45 minutes.
  17. (To bake, place jar in a small shallow baking dish to keep it balanced in the oven.)
  18. Use hot pads to remove from oven.
  19. Scoop from jar to serve.
  20. Serve warm.
