Corn Spoonbread Mix In A Pint Jar
- 1/3 cup yellow cornmeal
- 2 tbsp flour
- 1 tbsp sugar
- 1/2 tsp pepper
- 1/2 tsp salt (I use less since I don't like salt).
- 1 (8ounce) can cream style corn
- Place first 5 ingredients into a medium bowl.
- Blend with a whisk.
- Place mixture into a zipper sandwich bag.
- Place bag into a wide mouth pint size canning jar.
- (Use a new jar - not one that has ever been canned in or cooked in before.)
- Place can of corn into jar on top of mix.
- Screw lid onto jar.
- Decorate jar and attach a recipe card with the following instructions.
- Remove contents of jar.
- Empty mix into a medium bowl.
- Add 1 egg, 1 tablespoon oil and corn (undrained).
- Mix well.
- Spray inside of jar with cooking spray.
- Place batter into jar.
- DO NOT PLACE LID ON JAR.
- Bake at 350F for 45 minutes.
- (To bake, place jar in a small shallow baking dish to keep it balanced in the oven.)
- Use hot pads to remove from oven.
- Scoop from jar to serve.
- Serve warm.
