Truffled Goat Cheese Deviled Eggs

  1. Prepare hard boiled eggs.
  2. Slice eggs in half.
  3. Remove yolks and place in a mixing bowl.
  4. Mash up yolks with a fork, then add mayonnaise and whisk until the yolk is broken up and the mixture is smooth.
  5. Add truffle oil, minced truffle and goat cheese; whisk until combined.
  6. Taste and season with salt and lemon juice.
  7. Spoon mixture into a disposable pastry bag or plastic zipper bag and cut off the tip.
  8. Pipe the mixture into the center of the egg whites.
  9. Chill until serving time.
