Bran Flax Muffins - Bob's Red Mill Bran Flax Muffins

  1. Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.
  2. Stir in carrots, apples, nuts, and raisins (if desired).
  3. Combine milk, beaten eggs, and vanilla.
  4. Pour liquid ingredients into dry ingredients.
  5. Stir until ingredients are moistened.
  6. DO NOT OVER MIX.
  7. Fill muffin cups 3/4 full.
  8. Bake at 350 degrees (175 C.) for 15 to 20 minutes.
