Black Beans And Brown Rice Recipe

  1. Add in brown rice to boiling water, cook till done, set aside.
  2. In extra-large saucepan, combine red, yellow and green peppers, and onion and saute/fry over medium heat till ready, about 3-5 min.
  3. Next, add in cooked black beans and pureed tomatoes to mix.
  4. Stir gently but thoroughly.
  5. Season with garlic pwdr and carob chips, a healthy pinch of rosemary plus a chunk of Caribbean Jerk seasoning (it's like chutney!).
  6. Cook over medium heat for 15-20 min, then simmer till ready to serve.
  7. Serves 12.
