Cherry Parfait Crunch
- 34 lb dark sweet cherry
- 12 cup apple juice, unsweetened
- 14 teaspoon ground cinnamon
- 1 dash ground nutmeg
- 1 teaspoon cornstarch
- 1 tablespoon water
- 13 cup cereal, natural wheat & barley nuggets, not flakes
- 2 tablespoons toasted almonds, chopped
- 2 cups non-fat vanilla yogurt
- Remove stems & pits from cherries, then cut into halves (about 2 1/4 cups).
- In a small saucepan combine cherries, apple juice, cinnamon & nutmeg, cooking & stirring over medium heat for 5 minutes or until cherries begin to soften.
- In a small container combine cornstarch & water, stirring until smooth, then stir this mixture into the hot cherry mixture.
- Turn heat up to high & continue cooking & stirring until mixture boils & thickens slightly.
- Remove from heat, let cool for 10 minutes, then cover & refrigerate until chilled.
- After cherry mixture has chilled, in a small cup combine.cereal & almonds.
- In 4 10-ounce wine or parfait glasses, equally divide & layer half the cherry mixture, then half the yogurt & half the cereal mixture.
- Repeat the layers & serve!
