Custard Yogurt Custard Pudding

  1. Put the eggs, sugar, and cornstarch in a bowl.
  2. Mix well.
  3. Heat the milk and vanilla in a pot.
  4. When the edges begin to bubble, turn off the heat.
  5. Put 1/3 of the milk into the Step 1 bowl and mix well.
  6. Strain the Step 2 mixture into a pot containing the rest of the milk.
  7. Turn the heat on again, and stir the mixture continuously.
  8. Once it has thickened, turn the heat to low and continue cooking while stirring for 1 minute.
  9. Transfer the mixture to a bowl.
  10. To stop it from drying out, wrap the bowl with plastic wrap, and let cool.
  11. Mix the gelatin with water and leave to soak.
  12. When the custard from Step 5 has cooled, mix it until it becomes smooth.
  13. Add the yogurt and mix well.
  14. Heat the soaked gelatin in the microwave for 20-30 seconds to melt.
  15. Pour the gelatin into the custard and mix well.
  16. (It's best to mix as you pour).
  17. Pour into pudding cups and chill in the refrigerator to set.
  18. Top with whipped cream, if desired.
