Veggie Wrap
- 1 Tablespoon Non-Fat Greek Yogurt
- 1 teaspoon Olive Oil
- 1 clove Garlic, Minced
- 1/2 teaspoons Rice Wine Vinegar
- 1/2 teaspoons Salt, Or To Taste
- 1/2 teaspoons Pepper Or To Taste
- 1 whole Wheat Tortilla
- 1/4 whole Red Bell Pepper, Sliced
- 4 slices Red Onion
- 1 whole Small Lemon Cucumber
- 1/4 cups Edamame, Shelled
- In a small bowl, combine all ingredients to make the sauce.
- Spread a thin layer of sauce over the tortilla then add the vegetables.
- Fold the edges of the tortilla to create a wrap, securing with either a toothpick or aluminum foil.
