Turkey Sausage, Onion & Pepper Heroes - Weight Watchers
- 8 ounces uncooked turkey sausage, cut into 1/2-inch slices
- 1 teaspoon olive oil
- 1 tablespoon minced garlic (to taste)
- 1 medium uncooked vidalia onion, thinly sliced
- 1 medium sweet red pepper, thinly sliced
- 1 medium green pepper, thinly sliced
- 1 tablespoon balsamic vinegar
- 8 ounces Italian bread, about 1 medium loaf
- Coat a large nonstick skillet with cooking spray and set over medium heat.
- Saute sausage until browned, about 5 minutes; remove to a plate and cover to keep warm.
- Add oil to same skillet and heat for about 45 seconds; add garlic and saute until golden, about 30 seconds.
- Add onion and saute for 3 minutes.
- Add peppers and saute until vegetables are softened, about 6 to 8 minutes more.
- Stir in vinegar and then return sausage to skillet; toss to combine.
- Split bread lengthwisealmost, but not all the way through; fill with sausage mixture.
- Cut into 4 equal pieces and serve.
