Small BBQ Meatballs on Rice
- 12 lb ground pork
- 12 lb ground beef
- 12 cup dry breadcrumbs
- 12 cup condensed milk or 12 cup half-and-half cream
- 1 small onion, finely chopped
- salt and pepper
- 12 cup ketchup
- 14 cup chili sauce
- 2 tablespoons Dijon mustard
- 1 garlic clove, chopped (I use more cause I love garlic!)
- 2 teaspoons butter
- 2 drops Tabasco sauce (or more, to taste!)
- 2 tablespoons brown sugar
- salt and pepper
- Mix all of the meatball ingredients together and form into small meatballs.
- Place in a baking dish and set aside.
- Preheat oven at 325F.
- Mix all of the sauce ingredients, cook (bring to a boil) on stove top for a few minutes.
- Put sauce on top of the meatballs and bake in the preheated oven for approximately 30 minutes.
- Serve on top of cooked rice.
- SPECIAL NOTE: The sauce may be doubled if you like a lot of it on your rice -- again, adjust this recipe to your personal liking after trying it once as-is -- there's not one recipe that I haven't adapted to make it my own!
