Pennsylvania Dutch Corn Pie Recipe

  1. Make pastry.
  2. In a medium bowl with fork, lightly stir flour and salt.
  3. Cut in Crisco till coarse crumbs form.
  4. Sprinkle cool water over dough and mix till it holds together.
  5. Shape into a ball and divide in half.
  6. Roll out half and line a 9x13 inch pan.
  7. To prepare filling, remove the corn from the cobs and combine with the crackers, hard-boiled Large eggs, salt and pepper.
  8. Turn mix into prepared crust.
  9. Pour in lowfat milk and dot with butter.
  10. Top with remaining crust and vent.
  11. Bake at 350 degrees for 1 hour; let stand 15 min before serving.
  12. Serves 6.
