Chicken Livers in Wine
- 1 lb chicken liver
- 4 tablespoons butter
- flour (for dredging)
- salt and pepper, to taste
- 12 cup white wine
- Dip livers in flour and fry in butter in skillet or chafing dish.
- Season with salt and pepper to taste, and add white wine when almost done.
- Serve for brunch with scrambled eggs.
