Chewy Christmas Macaroons

  1. Heat oven to 325F.
  2. Line cookie sheets with parchment paper or grease; set aside.
  3. Combine butter, sugar and salt in bowl; beat at medium speed until creamy.
  4. Add eggs, almond flavoring and food color, if desired; continue beating until well mixed.
  5. Stir in coconut with wooden spoon until well mixed.
  6. Drop dough, by rounded tablespoonfuls or cookie scoop, onto prepared cookie sheets.
  7. Bake 20-22 minutes or until edges are lightly browned.
  8. Cool 5 minutes on cookie sheets; remove to cooling racks.
  9. Cool completely.
  10. Sprinkle with powdered sugar.
