Grilled Eggplant Parmesan Recipe

  1. Slice eggplant into 1/2 inch thick portions.
  2. Heat your grill on medium-high heat.
  3. In a small bowl, mix olive oil, vinegar, garlic, salt and pepper.
  4. Brush eggplant slices with mixture.
  5. Grill the eggplant for 5 minutes to a side.
  6. Don't turn more than once to get nice grill lines.
  7. While eggplant is grilling, heat pasta sauce on stove or in microwave.
  8. When eggplant is done, place on large platter.
  9. Spoon about 1 Tbsp of pasta sauce on each slice and top with about 1 Tbsp of Parmesan cheese.
  10. Serve warm!
