Barbecue Ranch Chicken Salad
- 1 lb. boneless skinless chicken breast
- 1/2 cup BULL'S-EYE or KRAFT Original Barbecue Sauce
- 8 cups mixed salad greens
- 2 medium tomatoes, cut into wedges
- 1/2 medium red onion, sliced
- 1/2 cup KRAFT Lite Ranch Dressing
- 1/4 cup ATHENOS Crumbled Blue Cheese
- 4 cups red or green grapes
- 2 cups vanilla ice cream
- 4
- 32 fl oz (4 cups) drinking water
- COOK and stir chicken in barbecue sauce in nonstick skillet on medium-high heat until chicken is cooked through.
- Add additional barbecue sauce, if desired.
- TOSS greens, tomato, and onion in bowl.
- Pour dressing over greens; toss to coat.
- Top with cooked chicken.
- Sprinkle with blue cheese crumbles.
- SERVE each salad with one quarter of the grapes, 1/2 cup ice cream, and a cookie.
- SERVE an 8 fl oz glass of water per person with meal.
