Fish Marinade for Grilling
- 2 fluid ounces olive oil
- 1 clove garlic, chopped
- 14 teaspoon cayenne pepper
- 1 teaspoon grated lemon, rind of
- 1 orange, juice only
- 1 tablespoon chopped basil
- 1 tablespoon chopped parsley
- 1 tablespoon angostura low sodium soy sauce
- 14 cup red onion
- Mix all ingredients together and pour over fish.
- Marinate fish for about 30 minutes, but never marinate for more than 1 hour, as the fish will begin to cook.
- Cook fish over a charcoal grill, 8 to 10 minutes a side.
