Fried Yam Puffs - Epok-Epok Keladi
- 1 1/2 pounds yam cut into small pieces
- 1 teaspoon salt
- 1 teaspoon monosodium glutamate
- 2 tablespoons sugar
- 2 tablespoons butter softened
- 2 tablespoons tapioca flour
- 4 ounces shrimp
- 4 ounces meat minced
- 3 small onions chopped
- 2 ounces green peas frozen
- 1 each onions chopped
- 2 each mushrooms diced
- 1/2 teaspoon salt
- 1/2 teaspoon monosodium glutamate
- 1 teaspoon sugar
- 1/2 teaspoon soy sauce, tamari
- 1/2 teaspoon oyster sauce
- 1/2 tablespoon cornstarch in 3 T water
- 2 tablespoons vegetable oil
- Steam yam until cooked.
- Remove and mash.
- Leave to cool.
- Heat cooking oil in pan.
- Add prawns and meat and stir for 1 minute.
- Add onions, spring onion and mushrooms and stir for another minute.
- Add salt, msg, sugar, soya sauce, oyster sauce and cornflour mixture.
- Stir well.
- Add in green peas and stir.
- Remove and cool.
- Put puff ingredients in a bowl and mix well.
- Knead thoroughly.
- Divide into 20 to 25 portions.
- Roll each portion into a ball and flatten.
- Put 1 teaspoon stuffing in centre of dough.
- Moisten edges, fold over and seal.
- Heat cooking oil for deep frying.
- Deep fry until golden brown.
- Serve Hot.
