Lemon & Pepper Zucchini Slices

  1. Preheat a medium skillet with the Vegetable Oil to around 350F
  2. Slice the zucchini into an eight of an inch thick round slices
  3. Mix the corn meal, salt, and garlic powder well in a bowl.
  4. Using a pastry brush, coat the zucchini slices in lemon juice.
  5. Toss the slices in the bowl in the cornmeal mix.
  6. Remove from bowl and carefully, so the cornmeal mix stays on, coat with more lemon juice.
  7. Sprinkle the Lemon Pepper seasoning over both sides.
  8. Place in the skillet and cook on medium heat for about 5 minutes per each side.
  9. Or until golden brown and crispy.
  10. Remove from the skillet and place on paper towel to absorb extra oil.
  11. Serve & Enjoy!
  12. You can also make these in a stand-alone skillet.
  13. Preheat it to 350F and follow the directions.
