Chilled Chocolate Pecan Pie - Chocolate Pecan Pie

  1. In a medium saucepan, melt the butter over low heat.
  2. Stir in sugar, and set aside to cool.
  3. In a mixing bowl, beat eggs well.
  4. Stir in chopped pecans and melted butter mixture.
  5. Stir in coffee if using.
  6. Spread chocolate chips evenly over the bottom of the pie crust.
  7. Pour pecan mixture over the crust.
  8. Bake at 375 degrees (200 C.) F. for 45 to 50 minutes, or until set.
  9. Cover and let stand at room temperature about 8 hours before serving.
  10. Pie will be soft.
  11. Combine cream, confectioners' sugar, and vanilla in a small mixing bowl.
  12. Whip until stiff.
  13. Garnish pie with whipped cream.
