To Die for Truffles

  1. In 2 quart saucepan, combine whipping cream and chocolate.
  2. Cook over low heat, stirring constantly until chocolate is melted and mixture is smooth.
  3. This should take between 2-4 minutes.
  4. Stir in butter until melted.
  5. Cool to room temperature.
  6. (about 30 minutes).
  7. Stir in vanilla.
  8. Cover and refrigerate until firm enough to shape.
  9. (at least 8 hours).
  10. To make truffles, shape teaspoonful size mixture into 1 inch balls.
  11. Roll in optional topping.
  12. Refrigerate until firm (at least 2 hours).
