Red Potato Casserole
- 2 cups fresh tomatoes, chopped
- 2 cups red potatoes, peeled and cubed
- 1/2 cup red onions, diced
- 1/4 cup extra-virgin olive oil
- 1 tbsp. fresh basil, chopped
- 2 tbsp. fresh parsley, finely chopped
- 2 tsp. dried oregano
- 1/4 cup water
- 1/2 tsp. paprika
- 3/4 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 2 cups baked tofu
- firm tofu, diced
- Combine all the ingredients in a casserole dish and mix well.
- Cover and bake in a preheated 425F oven for 45 minutes.
