Creamy Rice Pudding

  1. Place raisins and water in saucepan.
  2. Bring to boil on medium-high heat.
  3. Reduce heat to medium-low; simmer 5 minutes or until raisins are plumped.
  4. Drain raisins; cool.
  5. Pour milk into large bowl of electric mixer fitted with wire whip attachment.
  6. Add pudding mix and nutmeg.
  7. Beat on medium speed 2 minutes or until well blended.
  8. (Do not over beat.)
  9. Let stand 15 minutes.
  10. Fold raisins and rice into pudding mixture.
  11. Pour into full-size hotel pan (or half-size hotel pan for trial recipe).
  12. Refrigerate until ready to serve.
