Creamy Rice Pudding
- 1 qt. raisins
- 1 qt. water
- 1 gal. Cold milk
- 1 pkg. JELL-O Vanilla Instant Pudding
- - ground nutmeg
- 3 qt. Cooked long-grain white rice
- Place raisins and water in saucepan.
- Bring to boil on medium-high heat.
- Reduce heat to medium-low; simmer 5 minutes or until raisins are plumped.
- Drain raisins; cool.
- Pour milk into large bowl of electric mixer fitted with wire whip attachment.
- Add pudding mix and nutmeg.
- Beat on medium speed 2 minutes or until well blended.
- (Do not over beat.)
- Let stand 15 minutes.
- Fold raisins and rice into pudding mixture.
- Pour into full-size hotel pan (or half-size hotel pan for trial recipe).
- Refrigerate until ready to serve.
