Chicken, Lime and Chilli Penne

  1. Cook pasta in a large saucepan of boiling water, following packet directions, until tender.
  2. Drain.
  3. Meanwhile, heat oil in a large frying pan over medium-high heat.
  4. Add chilli, garlic and green onions.
  5. Cook, stirring, for 1 minute.
  6. Reduce heat to low.
  7. Add chicken, lime rind, juice and pasta.
  8. Season with salt and pepper.
  9. Simmer, stirring, for 4 to 5 minutes or until heated through.
  10. Remove from heat.
  11. Add coriander.
  12. Toss to combine.
  13. Serve.
