Ozzel'S Jambalaya
- 2 medium onions, chopped
- 1 bell pepper, chopped
- 1 lb. smoked sausage, sliced
- 1 1/2 tsp. parsley, dried
- 1 1/2 tsp. thyme
- 1 1/2 tsp. oregano
- 1 1/2 tsp. Cajun seasoning
- 2 cans chicken broth
- 1 can Ro-Tel tomatoes
- 1 small can chopped ham
- 1 small can chopped chicken
- 1 can tomato soup or juice
- 1 1/2 c. instant rice
- Saute onions, peppers and sausage until onions are transparent. Add parsley, thyme, oregano and Cajun seasoning; stir.
- Add broth, tomatoes, ham and chicken.
- Simmer for 30 minutes.
- Add tomato soup or juice and bring to a boil.
- Add rice and remove from burner and cover.
- Let stand for 15 minutes.
- Serve with salad and bread.
