Paul's Favorite (Lightened Up) Chicken

  1. Place bacon pieces, garlic and onion in large skillet over medium-high heat, fry until bacon is crisp.
  2. Drain if necessary.
  3. Add ham and chicken to skillet.
  4. Cook, stiring occassionally, until chicken is about half cooked.
  5. Add bell pepper and mushrooms and cook until veggies are tender and chicken is cooked through (no longer pink).
  6. Add cheese and spices and cook until everything is coated and cheese is melted.
  7. Serve with pasta, rice or potatoes.
