Spicy Italian Sausage Zucchini Boats

• 6 (6- to 8-inch) zucchini
• 1/2 pound spicy Italian sausage
• 1 tablespoon Land O Lakes Butter
• 1 small (1/2 cup) onion, chopped
• 1 teaspoon finely chopped fresh garlic
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• 1 (14.5-ounce) can petite diced tomatoes, drained
• 12 (3/4-ounce) slices Land O Lakes Deli 4 Cheese Italian Blend, cut diagonally

1. Melt butter in another skillet over medium heat until sizzling.
2. Add onions, garlic, salt and pepper.
3. Cook 5 minutes or until onions are softened.
4. Stir in tomatoes; cook 5-8 minutes or until liquid has been absorbed.
5. Remove from heat.
