Arugula, Endive, and Radicchio Salad

  1. In a bowl whisk together oil and vinegar and season with salt and pepper.
  2. Discard coarse stems from arugula.
  3. Thinly slice radicchio and cut endives crosswise into 1/2-inch pieces.
  4. In a large bowl toss greens with vinaigrette until coated well.
