Green Beans with Smoked Bacon Recipe

  1. Bring a large pot of heavily salted water to a boil.
  2. Meanwhile, prepare an ice water bath by filling a bowl halfway with ice and water.
  3. Place the beans in the boiling water and cook until crisp tender, about 3 minutes.
  4. Drain and place in the ice water bath to cool.
  5. Drain and set aside.
  6. In a large frying pan set over medium heat, cook the bacon until it starts to brown.
  7. Add the onion and cook until it caramelizes and turns golden.
  8. Add the reserved green beans, vinegar, and sugar and cook, stirring, until the sugar has dissolved.
  9. Mix in the parsley and season with salt and pepper.
