Orange -Almond Cake
- 1 14 cups all-purpose flour (or 1 1/2 cups cake flour)
- 1 cup sugar or 1 cup Splenda sugar substitute
- 1 12 teaspoons baking powder
- 12 teaspoon salt
- 34 cup 1% low-fat milk
- 13 cup canola oil
- 14 cup egg substitute
- 2 teaspoons orange rind, grated
- 14 cup sliced almonds
- 1 tablespoon sugar or 1 tablespoon Splenda sugar substitute
- 2 tablespoons orange-flavored liqueur
- Heat oven to 35o.
- Grease and flour square cake pan (8x8x2).
- Beat all ingredients until smooth, except almonds, 1 tablespoon sugar and the liquer.
- Pour into pan.
- Sprinkle with almonds.
- Bake 40-45 minutes, or until wooden pick inserted in center comes out clean.
- Sprinkle with tablespoon sugar.
- Poke holes randomly around top of cake and drizzle with liquer.
- Cook 10 to 15 minutes.
- Remove from pan and cool completly before cutting.
