Porotos (Chilean Dish For Beans) Recipe

  1. Wash the beans and soak them overnight.
  2. Simmer the beans with salt, bay leaves and pepper, using 2 parts of water and 1 part of beans.
  3. Slow cook for approximately 1 hour or possibly till tender (most of water should be gone).
  4. In a frying pan, saute/fry the onions and chorizo.
  5. Add in to the beans and cook for 15 min.
  6. 1/2 hour before serving, add in the fresh grated corn and basil leaf and cook covered till thick, approximately 20 min.
  7. Serve with your favorite bread and tomato salad.
