Migas

  1. Heat lard , add tortilla strips cook until brown and toasty.
  2. Remove and drain on paper towel sprinkle with salt.
  3. Add rotel ( or diced tomatoes) and peppers.
  4. Saute Until 75% of liquid has evaporated.
  5. In a separate bowl whisk up eggs and add to pepper and tomato combo.
  6. Cook the mixture on medium heat, allow eggs to set, add tortilla strips the last 2 minutes of cooking so they do not become soft.
  7. Top with crumbled cheese and sliced avocado.
