Migas
- 4 corn torillas cut up in strips or torn
- 4 eggs
- 1 jalapeno
- 1/2 cup rotel or diced tomatoes
- 1/2 avocado sliced
- 1 1/2 tbsp lard
- Heat lard , add tortilla strips cook until brown and toasty.
- Remove and drain on paper towel sprinkle with salt.
- Add rotel ( or diced tomatoes) and peppers.
- Saute Until 75% of liquid has evaporated.
- In a separate bowl whisk up eggs and add to pepper and tomato combo.
- Cook the mixture on medium heat, allow eggs to set, add tortilla strips the last 2 minutes of cooking so they do not become soft.
- Top with crumbled cheese and sliced avocado.
