Reuben Sandwiches
- 2 cup saurkraut
- 1/2 chopped yellow onion
- 2 garlic cloves minced
- 1 tbsp olive oil
- 1/2 tsp pepper
- 1 tsp Hungarian paprika
- 3 lb corned beef (store bought)
- 1 water
- 1 Rye bread
- 1 thousand island dressing (room temp)
- 1 Swiss cheese (shredded or thinly sliced)
- Preheat oven to 325.
- Place corned beef in roasting pan or any deep dish.
- Cover with water to just cover barely half the meat.
- Cover with foil and cook for 1 hours
- Meanwhile saute onions and garlic in olive oil for about 7 minutes until transclucent.
- Add drained saurkraut.
- Add paprika and pepper.
- Sautee for about 5 min.
- Take out meat and let rest for 15 min.
- Thinly slice meat across the grain.
- Assemble sandwich.
- Toast bread in oven with cheese or toaster oven if you want the cheese melted and bubbly.
- Thousand island on both pieces of bread.
- Follow with meat, then saurkraut.
