Eggs Stuffed with Smoked Salmon and Caviar

  1. Line rimmed baking sheet with paper towels.
  2. Blend 3 tablespoons chives, oil, and lemon juice in medium bowl.
  3. Mix in smoked salmon.
  4. Fold in caviar.
  5. Chop 4 egg yolks (reserve remainder for another use) and stir into salmon mixture.
  6. Season to taste with ground black pepper.
  7. Pile 1 generous tablespoon salmon mixture in cavity of each egg-white half.
  8. Arrange eggs on prepared sheet.
  9. Cover with plastic; refrigerate up to 8 hours.
  10. Place eggs on platter.
  11. Sprinkle with additional chives.
  12. Garnish with lemon wedges and herb sprigs.
