Healthy Carrot Cake
- 2 cups whole wheat flour
- 34 cup sugar
- 12 cup light brown sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 cups finely grated carrots
- 12 cup canola oil
- 12 cup applesauce
- 2 teaspoons vanilla
- 1 cup pureed firm tofu or 1 cup flax vegan egg substitute Flax Vegan Egg Substitute for the equivalent of 4 egg
- 12 cup chopped walnuts
- Preheat oven to 350 degrees F.
- Grease a 9x9 inch cake pan.
- Stir together all dry ingredients except nuts.
- Mix in carrots, tofu or flax mixture, oil, apple sauce and vanilla.
- Beat about 2-3 minutes until well mixed.
- Stir in the walnuts.
- Pour mixture into greased cake pan.
- Bake at 350 degrees for about 55 minutes, or until a knife inserted into center comes out cleanly.
- Cool on a wire rack.
- Enjoy!
