Italian-Style Greens Soup With Arborio Rice

  1. Heat oil in a pot over medium-high heat.
  2. Add the onion and celery and cook, stirring occasionally, until it starts to soften, about 10 minutes.
  3. Add broth, water, rice and salt, and bring to a boil.
  4. Add the Chinese broccoli, then reduce heat to medium-low and simmer 10-15 minutes, until the stems are tender and the rice is cooked.
  5. Stir in the Parmesan, ladle into bowls, and garnish with additional Parmesan and ground black pepper.
