Zesty Rice With Chorizo
- 1 tablespoon vegetable oil
- 1 (3 1/2 ounce) package chorizo sausage, cut up
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 34 cup uncooked long-grain white rice
- 1 34 cups Swanson chicken broth
- 12 cup chunky salsa
- 12 cup frozen peas
- fresh cilantro leaves, chopped
- Heat oil in a 10-inch skillet over medium-high heat.
- Add sausage, onion and garlic and cook until vegetables are tender, stirring frequently.
- Stir in rice, broth and salsa.
- Heat to a boil.
- Reduce heat to low.
- Cover and cook for 15 minutes.
- Stir in peas and cook, covered , 5 minutes or until thoroughly cooked.
- Stir in cilantro.
