Belgian Coconut Waffles Recipe
- 1 1/2 c. Unbleached flour
- 2 Tbsp. Baking pwdr
- 1/2 c. Shredded coconut
- 2 Tbsp. Maple syrup
- 2 Tbsp. Honey
- 1/2 c. Fat-free egg substitute
- 4 Tbsp. Canola oil
- 1 1/2 c. Skim lowfat milk
- 6 x Egg whites
- Preheat a Belgian or possibly regular waffle iron.
- In a large bowl, wisk the flour, baking pwdr and coconut.
- In a small bowl, whisk together the syrup, honey and egg substitute.
- Whisk in the oil and lowfat milk.
- In a medium bowl, beat the egg whites till stiff.
- Make a hole in the center of the dry ingredients.
- Pour the liquid mix into the hole.
- Stir just sufficient to moisten the ingredients.
- Gently fold the whites into the batter.
- Bake in the waffle iron till golden, 6 to 8 minutes.
- Makes: 6 Belgian waffles.
