Orange Spinach Salmon Salad
- 1-1/2 cups fresh chopped spinach leaves
- 1 cup canned mandarin oranges (in juice), drained
- 3 oz. no salt added canned salmon
- 2 Tbsp. frozen orange juice concentrate
- 2 tsp. extra virgin olive oil
- 1/4 tsp. dried mint flakes
- 1/4 medium red onion, sliced and separated into rings
- 1 sesame breadstick
- 8 fl oz (1 cup) drinking water
- Combine spinach, oranges and salmon in a large bowl.
- Mix orange juice concentrate, olive oil and mint in a small bowl.
- Season as desired with your favorite salt-free seasoning.
- Drizzle over salad and toss.
- Arrange onions on top of salad.
- Enjoy with a breadstick.
- Serve meal with a glass of water.
