Sweet Potato Pancakes
- 2 eggs, slightly beaten
- 1 tsp salt
- 2 tbsp vegetable oil
- 1 pinch baking powder
- 1 tbsp light or dark brown sugar
- 1 tbsp all purpose flour
- 2 cup grated peeled raw sweet potatoes (about 1/2 pound)
- Mix the grated sweet potatoes with the eggs, salt, flour, baking powder, and brown sugar.
- Heat the oil in a 12 inch skillet over moderately high heat.
- Drop the batter into the hot oil by rounded tablespoonsful, flattening them slightly with a pancake turner.
- Fry the pancakes about 5 minutes, or until they are golden brown on the bottom.
- Flip the pancakes over with the turner and cook for 4 or 5 more minutes.
- Drain briefly on paper towels.
- Serve hot.
