Sweet Potato Pancakes

  1. Mix the grated sweet potatoes with the eggs, salt, flour, baking powder, and brown sugar.
  2. Heat the oil in a 12 inch skillet over moderately high heat.
  3. Drop the batter into the hot oil by rounded tablespoonsful, flattening them slightly with a pancake turner.
  4. Fry the pancakes about 5 minutes, or until they are golden brown on the bottom.
  5. Flip the pancakes over with the turner and cook for 4 or 5 more minutes.
  6. Drain briefly on paper towels.
  7. Serve hot.
