Healthy Filipino Green Bean Stew
- 5 cup long green beans, sliced diagonally
- 1 plum tomato, roughly chunked
- 1 medium onion, roughly diced
- 1 lb lean ground beef
- 1 tbsp olive oil
- 2 1/2 tbsp fish sauce
- 1 1/2 cup water
- 5 piece Fresh ginger, chunked large (I like to use about 5-6 big chunks)
- In a pot, heat oil and sautAS onion until just translucent
- Add ground beef, break up and brown.
- (About 5-8min) add salt and pepper.
- Add the tomato, ginger and fish sauce and stir together for 3 min.
- (Play with the amount of ginger and fish sauce to your taste)
- Add the green beans, stir.
- Then add the water.
- Bring everything to boil, and cook until green beans are cooked but still a little crisp.
- Eat alone as a stew or serve along side some steamed jasmine rice.
- ***you can eat the ginger, but it's mainly for flavor.
- Remove when serving.
- Also my hubby like to add a few dashes of fish sauce to his plate***
