Berry Berry Streusel Bars

  1. Heat oven to 350F (180C).
  2. Combine oats, flour, brown sugar and margarine; mix until crumbly.
  3. Reserve 1 cup for topping; set aside.
  4. Press remaining oat mixture onto bottom of ungreased 8 or 9-inch square baking pan.
  5. Bake 13 to 15 minutes or until light golden brown.
  6. Cool slightly.
  7. In medium bowl, combine remaining ingredients; mix gently.
  8. Spread over crust.
  9. Sprinkle with reserved oat mixture, patting gently.
  10. Bake 20 to 22 minutes or until light golden brown.
  11. Cool completely; cut into bars.
  12. Store tightly covered.
  13. Note: I used whole wheat flour, 1/2 cup applesauce, 2 tablespoons butter and 2 tablespoons olive oil, and the crust and topping were both moist, flakey and delicious.
