Champagne-Fruit and Marsala-Cream Parfaits

  1. Marinate the fruit: In a large bowl, place peaches, apricots, plums, nectarines, cherries, and raspberries.
  2. In a small bowl, combine honey and champagne.
  3. Pour champagne mixture over fruit and gently toss to coat fruit evenly.
  4. Prepare the parfaits: In a medium bowl, with mixer on medium-high speed, whip heavy cream, marsala, and sugar together until soft peaks form.
  5. Place 1/2 cup of fruit salad in each of 8 parfait glasses, top with 2 tablespoons whipped cream, and add another 1/2 cup of fruit.
  6. Top each with remaining 2 tablespoons of cream.
  7. Serve immediately.
