Champagne-Fruit and Marsala-Cream Parfaits
- 1 1/2 c. sliced peaches
- 1 1/2 c. apricots
- 1 1/2 c. plums
- 2 c. nectarines
- 1 1/2 c. fresh cherries
- 1/2 c. fresh raspberries
- 1/4 c. honey
- 1/2 c. Champagne
- 1 c. heavy cream
- 1/4 c. sweet marsala
- 1 tbsp. confectioners' sugar
- Marinate the fruit: In a large bowl, place peaches, apricots, plums, nectarines, cherries, and raspberries.
- In a small bowl, combine honey and champagne.
- Pour champagne mixture over fruit and gently toss to coat fruit evenly.
- Prepare the parfaits: In a medium bowl, with mixer on medium-high speed, whip heavy cream, marsala, and sugar together until soft peaks form.
- Place 1/2 cup of fruit salad in each of 8 parfait glasses, top with 2 tablespoons whipped cream, and add another 1/2 cup of fruit.
- Top each with remaining 2 tablespoons of cream.
- Serve immediately.
