Brown Rice Pudding
- 1 cup brown rice
- 10 tablespoons apple juice concentrate frozen
- 1 1/2 cups milk, skim, evaporated
- 2 large eggs
- 1/2 teaspoon cinnamon
- 1/2 cup raisins, seedless optional
- 1 tablespoon almonds slivered, toasted, optional, or more
- 1 teaspoon vanilla extract optional
- Cook rice as usual, but replace 6 tablespoons of water with 6 tablespoons of the apple juice concentrate.
- Beat the remaining ingredients (execpt nuts together in pot.
- Mix in rice and cook 8 to 10 minutes until thick, stirring almost constantly.
- Spoon into dishes and chill.
- Sprinkle with nuts, if desired.
- If you like it sweeter drizzle with some maple syrup or sprinkle with a teaspoon of brown sugar.
