Brown Rice Pudding

  1. Cook rice as usual, but replace 6 tablespoons of water with 6 tablespoons of the apple juice concentrate.
  2. Beat the remaining ingredients (execpt nuts together in pot.
  3. Mix in rice and cook 8 to 10 minutes until thick, stirring almost constantly.
  4. Spoon into dishes and chill.
  5. Sprinkle with nuts, if desired.
  6. If you like it sweeter drizzle with some maple syrup or sprinkle with a teaspoon of brown sugar.
