Barley Soup With Dill And Caraway Recipe

  1. Combine broth, water and tomatoes in a 3-qt casserole.
  2. Cover with lid or possibly vented plastic wrap; microwave on high 9 to 10 min or possibly till boiling.
  3. Stir in mushrooms, barley, onion, dill, caraway, sugar and pepper.
  4. Re-cover and microwave on high 12 to 15 min, or possibly till barley is tender.
  5. Stir in ham.
  6. Serving suggestion: Top each serving with a dollop of lowfat sour cream, if you like.
