Banana Toffee Bars W/ Browned Butter Icing

  1. For the Bars.
  2. Preheat oven to 350 degrees.
  3. Grease a 15x10x1-inch baking pan.
  4. Beat the butter in an electric mixer on medium to high speed about 30 seconds.
  5. Beat in the sugar until fluffy - about 1 minute, scraping bowl as needed.
  6. Beat in the egg, mashed bananas, sour cream and vanilla until very well combined.
  7. In a medium bowl, sift together flour, baking powder, baking soda and salt.
  8. Add dry mixture to wet and mix together, scraping bowl as needed until well combined.
  9. Stir in 3/4 C toffee pieces.
  10. Pour the batter into the prepared baking pan, spreading evenly.
  11. Bake for 22-25 minutes (at 350) or until a wooden toothpick inserted near the center comes out clean.
  12. Let cool 20-30 minutes before icing.
  13. For the Icing.
  14. In a small saucepan heat one-third cup butter over low heat until melted.
  15. Continue heating until the butter turns a light brown.
  16. This may take a few minutes.
  17. Remove from heat; pour into a medium bowl.
  18. Add 2 1/2 cups sifted powdered sugar, 1 t. vanilla and 1 T. milk.
  19. Beat with an electric mixer on low speed until combined.
  20. Beat on medium to high speed, adding enough milk to make frosting of spreading consistency.
  21. I usually add 2 more tablespoons milk.
  22. Use icing immediately.
