Devilled Chicken

  1. Place the chicken portions on a board.
  2. Mix the sugar, ginger, mustard and curry powder together.
  3. Rub well into the surface of the chicken.
  4. Leave for 2 hours.
  5. Arrange the chicken on a grid in 2 roasting pans.
  6. Melt the butter and brush all over the chicken.
  7. Bake in a preheated moderately hot oven, 400F for 30 minutes, until golden brown.
  8. Mix the ketchup and sauces together and brush over the chicken portions.
  9. Return to the oven for 10 minutes.
  10. Arrange on a warmed serving dish and serve immediately.
