Salmon Piccata

  1. Melt 1 TBL of butter and oil in pan.
  2. Salt and pepper the salmon.
  3. Add to pan and cook on both sides until slightly pink on the inside.
  4. Remove from pan.
  5. Cook flour in leftover drippings.
  6. Add stock, juice from lemons, capers.
  7. Cook until slightly thickened.
  8. Remove from heat.
  9. Whisk in 2 TBL of butter.
  10. Pour sauce over salmon.
  11. Serve over rice.
