Salmon Piccata
- 1 Salmon filets
- 3 tbsp butter
- 1 tbsp olive oil
- 1 tsp flour
- 2 lemons
- 1/2 cup chicken stock
- 1 tbsp capers
- 1 salt and pepper to taste
- Melt 1 TBL of butter and oil in pan.
- Salt and pepper the salmon.
- Add to pan and cook on both sides until slightly pink on the inside.
- Remove from pan.
- Cook flour in leftover drippings.
- Add stock, juice from lemons, capers.
- Cook until slightly thickened.
- Remove from heat.
- Whisk in 2 TBL of butter.
- Pour sauce over salmon.
- Serve over rice.
