Hoppin John Jambalaya Recipe
- 2 tbsp. oil
- 2 lg. onions, minced
- 3 garlic cloves, minced
- 1 lg. green bell peppers, minced
- 1/2 c. minced parsley
- 3 c. regular rice
- 2 lbs. Kielbasa sausage
- 1 pound salt pork (optional) Good Seasoning
- 1 pound dry black eyed peas, 1/2 cooked
- 6 c. chicken broth (canned)
- 1 bunch fresh scallions (included tender green tips)
- Saute/fry regular onions, bell pepper, parsley and garlic for 10 min.
- Add in sausage, salt pork, peas, broth and bring to a boil.
- Add in rice, return to a boil, add in salt and pepper to taste.
- Cover and simmer 45 min.
- Add in scallions, stir and let stand 5 - 10 min before serving.
- Hints: Warm corn bread and a tossed salad is a great addition.
