Bluefish With Tropical Marinade Recipe
- 2 lb Bluefish Fillets (about = pound per serving), rinsed in cool water and patted dry
- 4 clv garlic, mashed
- 2 x Mangos, 1 mashed for marinade, 1 cut into slices as a garnish
- 2 x Lemons, cut into wedges
- 1 sm Papaya, mashed
- 2 x Chili Peppers (to taste), finely minced
- 3 Tbsp. Lime Juice
- 1 x = Tbsp. Fresh Cilantro, minced
- 1 Tbsp. Extra virgin olive oil
- In a bowl, add in garlic, mango, papaya, lime juice, chili peppers, cilantro and oil and whisk briskly to blend; marinate Bluefish Fillets in mix, cover and refrigerated (1 hour).
- Arrange Fillets in a buttered broiling pan; broil (6-8 min) 4-5" from heat source; baste regularly with marinade.
- Serve warm, garnished with mango slices and wedges of lemon to the side.
